KOPI AJIB brand produces ground Liberika Coffee grown by local community on peat land plantations in Sungai Terap Village, Betara Sub-District, Tanjung Jabung Barat Regency in Jambi Province, Sumatera, Indonesia. Natural Post-harvesting process includes sorting the fruit by using water to separate the sinking and floating beans. After separating the sinking beans, sorting is finalized with the separation of fruits that are considered not fully ripe. Furthermore, the coffee cherries are processed with Natural, Honey and Fullwash preparations. The process is carried out in a drying dome for approximately 40 days. In natural preparations, perfectly dried coffee cherries then ready to be peeled to produce coffee beans. The coffee beans produced by KOPI AJIB have been sorted to separate the defective, broken, black, perforated and pest-infested beans. After sorting, the coffee beans are sieved using a screen grader to separate the size of the coffee beans to ensure they’re all roasted evenly.
